On a diet or not, this soup recipe is hearty, healthy, and delicious! Not all recipes are created equal! When you have to eat the same soup everyday for the 7 Day Diet and you still look forward to every bowl, that’s saying something! Give it a try, it’s easy and sure to impress even the biggest meat eaters. I love garlic and a little bit of heat so I added garlic, spices, and habañero. I think the habañero pepper gives this soup the flavor depth that the original recipe.
You Will Need:
2 Tbsp Vegetable Oil
1 Bunch of Celery, cut into 2″ pieces
1 Yellow Onion, diced
2 lbs Carrots, peeled and sliced 1/2″ thick
10 Cloves Garlic, diced
3 Bell Peppers, seeded and cut into 2″ pieces
1.25 lbs White Button Mushroom, cut into large pieces
1 lb Fresh Green Beans, ends trimmed and cut in half
1 Habañero Pepper, de-seeded and finely chopped
1 28 oz. Can Crushed Tomatoes
1 Can Tomato Paste
3 dashes Kosher Salt
3 Tbsp. Black Pepper
1 Lrg Bay Leaf
2 cups Vegetable Broth
10-12 Cups Water
In a large stock pot, heat oil over medium. Add the first 3 solid ingredients and sauté to soften. Add garlic, bell peppers, mushrooms and green beans. Cook for 5 minutes, stirring a couple of times. Add all of the rest of the ingredients. Add spices to taste and bring to a boil. Cover, then simmer on low for about 35 minutes.
Try not to over season this because you can add a twist to every bowl you have.
Makes around 15 bowls.
